Most restaurants end up with the same audio setup by accident. A manager pairs a phone to a receiver behind the bar, someone else changes it during the shift, and by nine o’clock the dining room is louder than the conversation at table twelve. Meanwhile the patio has one speaker fighting traffic, and nobody has looked at the licensing question at all.
That last part is the one that costs money. Consumer streaming services — Spotify, Apple Music, a personal account, a radio in the corner — are licensed for personal listening, not for playing to your guests. Using one in your dining room is a performance rights violation, and the licensing bodies do send letters. A commercial music service removes that exposure.
Zones, Not One Big Volume Knob
A restaurant is not one room. It is a bar that wants energy, a dining room that wants conversation to work, a patio fighting the street, and a host stand where guests decide what kind of place this is. Running all of that off a single source means one of those zones is always wrong.
Zoned audio lets you set each area independently:
- Bar — higher level, more forward programming, and its own schedule for late service
- Dining room — level set so a four-top does not have to lean in, tuned against your surfaces
- Patio — weather-rated speakers, more level to overcome ambient noise, and a curfew for neighbors
- Restrooms and corridors — low-level fill so the room does not go dead when a guest steps away
Hard rooms are the usual culprit behind complaints. Concrete, glass, exposed ceilings and bare tables reflect everything, so two loud speakers at one end of the room produce a hot zone near the source and nothing at the far wall. More, quieter speakers spread evenly beats fewer loud ones every time. That is a layout decision, not a volume decision.
Programming That Follows the Day
Brunch, lunch, happy hour, and dinner want four different rooms. Our background music service schedules the change automatically, so tempo and energy shift on their own instead of depending on whichever manager is on shift.
Scheduling also removes the arguments. Staff pick their own music when nothing is programmed. Once a schedule is in place, the room sounds the same on a Tuesday as it does on a Saturday, and the closing shift cannot change it.
There is research behind the tempo decision, and it is narrower than the industry usually claims. In the classic Journal of Consumer Research field study, Ronald Milliman found that tables stayed about 56 minutes under slow-tempo music versus 45 minutes under fast-tempo music, and that bar spend rose with it — $30.47 per group under slow music against $21.62 under fast. Food spend was essentially unchanged. The extra money came from the bar, not the kitchen.
That is one US restaurant in the 1980s, so treat it as a direction rather than a forecast. It cuts both ways: faster programming turns tables at lunch, slower programming keeps people at them through dinner service. Which one you want depends on the hour, and a schedule is how you get both.

It runs on a schedule and drops between tracks, so the message lands without anyone shouting across the floor.
